- 1 small dill pickle, diced finely
- 1 green onion, chopped finely
- 1/4 tsp dried mustard
- Salt and pepper to taste (My Mom uses white pepper & celery salt)
- Paprika for garnish

- 8 oz of light cream cheese
- 1/4 cup fat free sour cream
- 2 6.5 oz cans chopped clams, reserving 3 tbsp of juice
- 2 small baby bell peppers, finely chopped
- 1 small shallot, finely chopped
- 1 clove of garlic, minced
- 1-2 tbsp fresh parsley, chopped (not pictured)

This is such a simple and classic dish. You can make it with a number of different toppings but favorite is tomato, basil and balsamic on top of a crisp baguette.
Bruschetta with Tomato and Basil:
- 5-6 firm tomatoes, diced very small
- 5-6 basil leaves, cut into very small ribbons (chiffonade)
- 1 small shallot, finely diced
- Drizzle of olive oil, to taste
- Drizzle of balsamic vinegar, to taste
- Sea salt and freshly cracked black pepper, to taste
- 1 clove of garlic

This recipe found in cookbook, Tyler's Ultimate by Tyler Florence. the recipe a bit by reducing the butter and anchovy amounts and by slicing the baguette. The combination of caramelized onions, salty anchovies and Asiago with the tangy olive was amazing! The colors of this appetizer may not be visually stunning but the flavors are. This crostini was a huge hit with everyone

This is new favorite side dish or appetizer. I created these with some of the leftover marinara, panko crumbs, and Parmesan you'll used for the Chicken Parmesan making for dinner. The zucchini coins were simple and quick to make and tasted wonderful! I loved the flavors and textures of this dish with the soft zucchini and marinara sauce, the salty cheese, and the crispy panko.
