Crab puffs are placed high on my list of appetizers. Crab puffs are a perfect snack for any party or get together. Over-all there is a little work involved with this recipe but nothing major. The crab mixture is delicious enough to eat by itself. Everyone around my house just devoured these; they were gone in no time. The recipe calls for canned crab but imitation crab will work as well. Nothing but some classic comfort food here – Chicken pot pie. This is a recipe that dominates anything you can buy frozen in the store. Unfortunately, this does require a lot of prep work to prepare. There are tons of vegetables that go into this, most of which need to be minced, chopped or sliced. If you want to save time try and get some help or maybe even buy a frozen vegetable mix from the grocery store. In the end, it’s so worth it though! Chicken pot pie to a great way to make good use of left over chicken. If you want to use fresh chicken, to cook it just slowly poach it in water for awhile. If you don’t have any chicken or would prefer something else, turkey can easily be used in its place. Substituting chicken for turkey could also make a great side dish for Thanksgiving! Serve with buttery biscuits. Enjoy.

This is a very simple and easy way to make delicious sautéed mushrooms. These go great on top of steak, chicken, pork, shrimp or just about any type of meat. Even give them a try on your favorite burgers. Although, I will admit this recipe is not perfect, but it’s really good. The mushrooms are sautéed in butter, oil, balsamic vinegar, garlic and oregano. Spanish Rice

It is basically sautéed rice with tomatoes, onion and bell pepper. This recipe can be prepared in about 40 minutes and is very easy to make while cooking your main dish. Chicken broth can be substituted for water if you are looking for a different flavor. Using chicken broth is how it is done traditionally. The rice is first browned and then simmered until all of the liquid is absorbed. This recipe can easily be doubled if you are serving a large crowd. Enjoy.

For those that are not yet familiar with this, ceviche is citrus marinated seafood. The shrimp is first marinated in lime juice and mixed with tomato, cilantro and onion. The hot pepper sauce gives this dish a nice little kick. Traditionally the shrimp are raw and cooked in the acid from the lime juice. However, since this method apparently is not proven to kill bacteria, please use pre-cooked shrimp. This dish reminds me a lot of a salsa and goes great with tortilla chips. If you enjoy eating fresh fish chances are you have probably deep fried them at least once. Although not the healthiest choice, deep frying fish gives them great flavor and that wonderful crispiness. If you are not going with the average box mix, finding a breading recipe for fried fish can at times be a little difficult. This recipe is very simple and coats the fish fillets with buttery crackers and various seasonings such as garlic salt and old bay seasoning. This recipe will work with fish such as perch, bluegill, crappie, walleye and bass. My personal favorite is crappie. These go great served with lemon wedges. Enjoy.

Blueberry crumb bars are an excellent way to use up fresh blueberries. One thing that I enjoy about this recipe is that it is fairly easy to make. The process is very simple, a dough mixture is placed into the bottom of a baking pan, topped with fresh blueberries and the remaining dough mixture is then crumbled on top. These bake for about 45 minutes and you will be enjoying them in no time.

During the summer months macaroni salad is one of my favorite dishes to prepare. It makes a great side dish to go with grilled chicken or hamburgers or it can be a meal in itself. This recipe ranks on the top of my list for cold salads. You won’t find any seafood in this one, but for those that require meat there are ham chunks in this salad. Some other notable ingredients include hard boiled eggs and celery. The best part of this salad of course is the dressing. Mayonnaise just isn’t enough, Dijon mustard, dill relish and chopped pimentos are required as well.

Shrimp parmesan is a very simple and delicious way to prepare shrimp. The process is fairly simple, the shrimp are tossed with olive oil, garlic, salt and pepper. They are then coated with a bread crumb and parmesan cheese mixture and baked. The shrimp are baked at 475 degrees so they do not take very long to cook, only about 10 minutes. These shrimp go perfect served on a bed of pasta with your favorite sauce. I just placed them on top of hot garlic and buttered noodles. You could also use spaghetti or alfredo sauce. The chicken is first fried in the pan until the breadcrumb coating is browned and then finished off in the oven. I love this method because the chicken comes out of the oven very moist. The best part about this recipe is the homemade marinara sauce. This is an excellent sauce that is made from strewed tomatoes and tomato paste. This recipe might look a little complex because of the ingredients and instructions but it is not bad. It does require a little work but this dish is bound to impress almost anyone! Enjoy.
Sloppy Joe Grilled Cheese

The combination of a sloppy joe and a grilled cheese is perfect. It makes for a delicious and easy dinner for the entire family and these would also go great for any lunch. What I find interesting about this recipe is dill pickle chips are piled onto the grilled cheese before it is fried in the pan. I prefer shredded cheddar cheese but you can use any type of cheese you like.
