The type of filling that I have presented for you in this recipe includes bean and beef as well as brown rice. Tomato sauce is added to the mixture just before the simmering is finished. You can adjust the seasonings to your taste; add more chili powder, cumin, salt and pepper as desired. You can add different types of cheese to the burritos if you want, or even melt cheese on top when they are finished. What I like to do is put a little enchilada sauce on top of the wrapped burritos, add cheese, and place into the oven until the cheese has melted. You can also add additional toppings such as lettuce, tomato and sour cream. This recipe can easily be split in half. Enjoy.

Beef and Bean Burritos

Although, there is nothing wrong with using plain chicken, it may be time to add a marinade to your recipes. This lime chicken marinade is perfect for Mexican dishes such as quesadillas, tacos, or burritos. You can even grill the chicken breasts whole and eat them that way. The chicken should be marinated for at least 6 hours but overnight is recommended to get the most flavor. The marinade ingredients complement each other nicely. To give you an idea, some of the ingredients include red wine vinegar, lime juice, lime zest and garlic.

For those that are craving a little heat Enchiladas Verdes might be perfect for you. This dish is pretty much a classic and is just like you would find in a Mexican restaurant. For this recipe we are making our own fresh green salsa that is basically a combination of fresh tomatillos and Serrano peppers. If you are not familiar with tomatillos, they are much like a green tomato in a husk. They can be found at any decent sized grocery store. For the chicken, the chicken is boiled in chicken broth, onions and garlic. You can use either white meat or dark meat, it’s up to you. Just remember that dark meat chicken takes a little longer to cook. Enjoy.

This is another amazing sub sandwich recipe for your Super Bowl party, perhaps the ultimate sub sandwich! Don’t let the long list of ingredients scare you, most of the vegetables are totally optional and you can add whatever you want. This sandwich is pretty simple; it uses 3 different types of meats, and 3 different types of cheeses. The French bread is spread with garlic butter and then toasted in the oven. It is meant to be served warm and It is eaten with tortilla chips. What I like about this recipe is that it uses a lot of fresh ingredients like tomatoes, peppers and cilantro. This appetizer could be cooking using numerous methods. You could cook it in the microwave, on the stove top, or in the slow cooker. I chose the slow cooker method because it is easy to keep warm. Homemade chicken taquitos can be a lot of work, but it is well worth it. These taquitos use a seasoned shredded chicken mixture for the filling, along with Monterey jack cheese.When using corn tortillas make sure that you warm them up in the microwave in small batches as you need them. Also, make sure you roll them up while they are still warm, otherwise they will tear apart. You can use flour tortillas instead of corn if you wish, these should be a lot easier to work with. Cinco de Mayo is approaching fast and many of you are contemplating what to prepare for this special day. There are a lot of great Mexican recipes on this website, Tostadas were a nice change from tacos and the chicken tinga turned out to be delicious. What I like best about this recipe is it uses a lot of fresh ingredients instead of canned. The sauce is a mixture of roma tomatoes, tomatillos and various spices. You can put whatever you want on top of the cheese but I prefer green onion, tomatoes, and black olives. This also goes great with sour cream. The best part is, this is a very easy dish to prepare and will be on the table in no time.
