Sweet and sour fish is breaded fish in a delicious sweet and sour sauce with an assortment of fruits and vegetables. You can basically use any kind of white fish for this recipe such as tilapia, halibut, bass, cod, ect. It is always good to try and find nice meaty fillets if possible. The fruits and vegetables going into this dish include pineapple, tomatoes, green peppers and onions. If you are in a rush and would prefer to use store bought sweet and sour sauce that would work as well. Serve on top of white rice. Enjoy.

Parmesan Fish

There are so many good ways to cook fish, pan fried, baked, deep fried, or grilled. So many ingredients to enhance the flavor, there are even some really good box mixes out there, but this is better. Last night for the first time I tried Parmesan fish and it was great. The fish is first rolled in bread crumb/parmesan cheese mixture and then deep fried but you can easily sauté in the pan if you don’t have a deep fryer. The real highlight of this recipe isn’t in the breading though; it’s in the delicious lemon sauce – A simple yet great tasting sauce consisting of lemon juice, lemon zest, mayo and basil. This recipe will work with many different types of fish including tilapia, cod, cat fish, bluegill, crappie, bass and many more. Enjoy.

Perhaps you have tried lime shrimp at a restaurant or made it before yourself, either way this is a fantastic recipe for it. This lime shrimp marinade uses classic Mexican flavors such a cumin, oregano and lime juice. For the marinade, its important not to allow the shrimp to marinade longer than the time stated in the recipe. The reason for this is because the acid from the lime juice will actually cook the shrimp if left in there for too long. Its summer and you can never have enough cold salad recipes. Here is the one recipe for seafood salad I have been meaning to post for awhile. This salad is perfect for cook-outs, picnics, and parties. You can use your choice of pre-cooked cold seafood . Imitation crab or lobster goes great in this salad as well. For those that are not yet familiar with this, ceviche is citrus marinated seafood. The shrimp is first marinated in lime juice and mixed with tomato, cilantro and onion. The hot pepper sauce gives this dish a nice little kick. Traditionally the shrimp are raw and cooked in the acid from the lime juice. However, since this method apparently is not proven to kill bacteria, please use pre-cooked shrimp. This dish reminds me a lot of a salsa and goes great with tortilla chips. Shrimp ceviche is perfect for a hot summer day. Enjoy.

If you are not going with the average box mix, finding a breading recipe for fried fish can at times be a little difficult.
