Anda Masala Paratha

Egg Paratha

Ingredients:

  1. 4 Eggs
  2. Wheat flour 2 cups
  3. Chopped capsicum 1
  4. Chopped tomato 1
  5. Chopped onions 2
  6. Chopped fresh coriander
  7. Red chilli powder 1 table spoon
  8. Cooking oil 2 table spoons
  9. Clarified Butter or Ghee

Method:

Take a frying pan and pour oil in it and heat it. When boiled put chopped onions and fry it until golden brown on medium heat. After that add the tomato and capsicum and fry it for few minutes more. After doing all this add eggs, salt, red chilli, while adding stir and mix it properly. Cook all the mixture until eggs are done. Now put the coriander leaves in to the mixture and then take off from the flame or heat and set a side.

Take flour in a bowl and add sufficient water required to convert it in to soft dough. Also add 2 table spoons of butter in it and for some times knead it again. After that make small balls out of the dough and roll the balls in a way to give them a roti shape. Put the egg mixture on 1 roti and cover it with another roti. Then roll this roti again to combine both roti’s and fry both sides properly with butter. Serve this egg Paratha and enjoy.
