White Chicken Chili

This is a lot different from your normal chili, as it uses no actual chili powder. Adding the shredded Monterey jack cheese makes a huge difference in the flavor and is necessary so do not leave it out. The original recipe called for diced jalapeño peppers, If you want left over chicken you want to use up, this is a great recipe for that. Enjoy.

Beef and Bean Burritos

There are so many different ways you can make a good burrito filling. Some of these ways include chicken, bean, and beef. The type of filling that I have presented for you in this recipe includes bean and beef as well as brown rice. The cooking method is simple, the ground beef is cooked with onion and garlic, various seasonings are added and brown rice is mixed in. Tomato sauce is added to the mixture just before the simmering is finished. You can adjust the seasonings to your taste; add more chili powder, cumin, salt and pepper as desired. You can add different types of cheese to the burritos if you want, or even melt cheese on top when they are finished. What I like to do is put a little enchilada sauce on top of the wrapped burritos, add cheese, and place into the oven until the cheese has melted. You can also add additional toppings such as lettuce, tomato and sour cream. This recipe can easily be split in half. Enjoy.

Berry Cheesecake

Perhaps you are looking for a good cheesecake recipe for the Holidays. If so, you have come to the right place. There are a lot of good cheesecakes out there but this berry cheesecake might just be one of the best. Like most traditional cheesecakes we are making a graham cracker crust, and a delicious fresh berry topping. What really impressed me about this recipe is the nice lemon flavor this cake has. The cheesecake itself gets a lot of its flavor from a full tablespoon of lemon zest. The fresh berry topping is basically strawberries, raspberries and blueberries tossed with warmed jelly. Is this sounding good to you yet? If so, give it a try for the Holidays! Enjoy.

Sausage Stuffed Shells

Sausage stuffed shells are a great way to make good use of those jumbo pasta shells. Some of the stuffing ingredients include Italian sausage, chopped spinach, and parmesan and ricotta cheese. Chocolate brownie mix is combined with crushed Oreo cookies in this fantastic recipe. If you want to experiment with different flavors you can use different flavors of Oreo cookies such as peppermint. After the brownies are baked and have cooled, a delicious glaze is drizzled over the top to even add sweeter flavor to these already amazing brownies. This recipe will make about 36 brownies. These are perfect for Christmas. Enjoy.

Cherry Cookies

These cherry cookies are perfect for Christmas and other holidays. The cookies are chocolate with cherries in the middle topped with even more chocolate. The flavor of the cookies reminds me of chocolate cake, they are very moist and rich in flavor. If you are looking for a great cookie recipe for Christmas, this is the way to go! Enjoy.

White Chocolate Covered Pretzels

White chocolate covered pretzels are almost necessary for the holidays. These are very easy to make and fun for the whole family. White chocolate can be replaced with dark chocolate if you prefer, and you can also add crushed peanuts on top instead of sprinkles. The recipe calls for the use of a double boiler but you can just melt the chocolate in the microwave instead if you desire. Everyone have a happy and safe holiday. Enjoy.

Key Lime Pie

One of the easiest pie recipes you will ever come across is Key Lime Pie. This pie originated in Key West, Florida. The pie is so simple to make the filling only consists of three ingredients; sweetened condensed milk, lime juice, and egg yolks. To save time you can use a prepared graham cracker crust and just pour the filling into it. Depending on where you live, you might not be able to find key limes.Enjoy.

Zucchini Brownies

If you have an abundance of zucchini this recipe for zucchini brownies might be exactly what you are looking for. Not only are these brownies a way to put that zucchini to good use, they are also some of the best brownies I have had in awhile. The brownies are so moist you might even have to eat them with a fork. To top things off, they are covered in a delicious chocolate frosting. When you are making the batter you will notice it is extremely dry, almost to the point where it’s like crumbs. This is normal and once it starts baking in the oven, the moisture from the zucchini will come out and moisten it. These are so easy to make and delicious, it’s well worth giving them a try. Enjoy.

Fall is the best time of year for baking because several things are in season. One of those things just happens to be pumpkin. Pumpkin cake is one of my favorite things to make with pumpkin puree. This cake is delicious and very moist. The original recipe calls for a 12×18 inch cake pan but two 9 inch round cake pans will work as well if you want to make a layer cake. You can add chopped walnuts into the better if you choose; I just put them on the top. The frosting is an outstanding cream cheese frosting that goes perfect with the pumpkin flavor. This is the perfect cake for fall, give it a try. Enjoy.

Lemon Butter Chicken

Lemon butter chicken is an Italian dish that is very easy to love, but at the time can be very easy to hate. The lemon butter sauce is a combination of butter, white wine, lemon juice, and heavy cream. Some of the additional ingredients that go into this recipe include mushrooms, bacon, artichoke hearts, and capers. With an ingredient list like this, this recipe could be hard to pass up. If you don’t want to use chicken, shrimp would also be delicious in this recipe.

Lime Chicken Marinade

If you enjoy Mexican foods you probably know using plain chicken in your recipes can get old after awhile. Although, there is nothing wrong with using plain chicken, it may be time to add a marinade to your recipes. This lime chicken marinade is perfect for Mexican dishes such as quesadillas, tacos, or burritos. You can even grill the chicken breasts whole and eat them that way. The chicken should be marinated for at least 6 hours but overnight is recommended to get the most flavor. The marinade ingredients complement each other nicely. To give you an idea, some of the ingredients include red wine vinegar, lime juice, lime zest and garlic.

It’s so good in fact you may not be able to control the temptation. Some of the ingredients that go into this Bundt cake include butter, sugar, and sour cream. What’s great about this cake is the brown sugar layer that is swirled into it. This layer consists of brown sugar, cinnamon, and pecans. When the cake has finished baking and has cooled, you can top with your favorite icing if you choose. A basic mixture of milk and confectioners sugar works great. Enjoy.

Reuben Sandwich

Chances are if you are a fan of corned beef, you have tried a Reuben sandwich. The Reuben sandwich is one of the most famous sandwiches around the world. It is a hot sandwich layered with corned beef, sauerkraut, Swiss cheese and Russian dressing. If you do not want to use Russian dressing, Thousand Island dressing will work in its place. The Russian dressing is very easy to make and includes ingredients such s mayonnaise, horseradish, Worcestershire sauce, ketcup, and chili sauce. If you need to make changes such as using a different type of bread besides rye that is fine as well. If you are looking to make great Reuben sandwiches at home, this is the recipe for you. Enjoy.

Those who love a little spice are sure to enjoy this grilled jerk shrimp recipe. It’s perfect for summer and outdoor grilling. This is shrimp coated with a jerk spice mixture and then grilled. Serving with fresh mango salsa is a must. Enjoy.

Greek Salad

Greek salad is a delicious summer salad consisting of ingredients such as romaine lettuce, Kalamata olives, feta cheese, and red onion. Like almost any salad, it’s all about the dressing. The dressing in this recipe is truly some of the best ever. It is important to allow the dressing to chill for at least 2 hours so the flavors can blend. There is a little prep work involved but in the end, it’s well worth the effort. If you want to add a little protein, sliced grilled chicken would go great in this salad. Enjoy.

Chicken Pesto Pizza

This recipe uses a pretty basic basil pesto consisting of ingredients such as basil, garlic, pine nuts and olive oil. There is nothing hard about this pizza recipe and if you are using pre-cooked chicken, it can be served within 30 minutes. Enjoy.

Blackberry Pie

Blackberries are in season and chances are you have come across an abundance of them. Now that you have all these blackberries, the question is what to do with them? Lime Shrimp

The end of summer isn’t here yet and Its not too late to fire up the outdoor grill. Perhaps you have tried lime shrimp at a restaurant or made it before yourself, either way this is a fantastic recipe for it. This lime shrimp marinade uses classic Mexican flavors such a cumin, oregano and lime juice. For the marinade, its important not to allow the shrimp to marinade longer than the time stated in the recipe. The reason for this is because the acid from the lime juice will actually cook the shrimp if left in there for too long. This is a perfect dish to serve if you don’t have a lot of time, or just want to have a great cookout. Enjoy.

You could use several different types of bread for the recipe but I prefer a nice loaf of French bread. Chicken Alfredo Casserole

One of the best types of casseroles I have come across is chicken alfredo casserole. This casserole is sure to please all alfredo and chicken lovers. This recipe is stacked with a delicious alfredo sauce. Some of the ingredients in the casserole include chicken, broccoli and mushrooms. Those 3 ingredients alone should be able to sell almost anyone on this fantastic dish. Let’s get down to the main component of this dish, which is the Alfred sauce itself. The sauce is a combination of butter, heavy cream, and parmesan and mozzarella cheeses. If you want to save time you can use pre-cooked left over chicken. This dish will go great on those cold summer days, or is perfect for other times of year as well. Enjoy.

1lb spiral pasta (cooked according to package directions and drained)
3 boneless skinless chicken breast halves

Strawberry Smoothie

The result was fantastic, and the flavors went really well together. Some of the ingredients included in this recipe are strawberries, kiwis, yogurt, and sugar. Just from this partial ingredient list alone you can tell this will be good. The smoothie should be served immediately after blending. This is a very simple recipe, as simple as just blending all of the ingredients.Enjoy.

Sauteed Mushrooms

This is a very simple and easy way to make delicious sautéed mushrooms. These go great on top of steak, chicken, pork, shrimp or just about any type of meat. Even give them a try on your favorite burgers. Although, I will admit this recipe is not perfect, but it’s really good. The mushrooms are sautéed in butter, oil, balsamic vinegar, garlic and oregano. You can even add a little salt and pepper for more seasoning. If you are looking for a quick and easy sautéed mushrooms recipe give this one a try. Enjoy.

Taco Filling

Finding a good taco filling recipe at times can be a little difficult. If you have been searching for a good recipe, the search has come to an end. This seasoning can be used with either ground beef or ground turkey. Enjoy.

Mango Salsa

If you have yet to try mango salsa, without a doubt you have been missing out, and it’s time to give it a try. For those of you that have, I don’t even need to tell you how good it really is. This salsa goes great with shrimp, chicken, or just about any type of meat. Of course, it would also go great served with just tortilla chips. A perfect dish to serve this with would be Jerk chicken, the flavors would complement each other nicely. This salsa is a basic combination of diced mango, bell pepper, green onion, jalapeño pepper, and cilantro. It is then mixed with the combination of lemon and lime juice for perfect flavor. This recipe can easily be double or tripled to meet your needs. Enjoy.

Lemonade

This drink really needs no introduction, it is popular almost everywhere. Lemonade is the perfect summer drink. There is nothing better on these hot summer days than an ice cold glass of lemonade. Best of all, it’s very easy to make. It’s as simple as lemon juice, water, and sugar. Of course, a lot of ice and a couple lemon slices don’t hurt either. Using freshly squeezed lemon juice is almost necessary for that great flavor. If you like this, maybe even give pink lemonade a try. Enjoy.
