Buffalo Chicken Tacos

Buffalo chicken tacos are an interesting combination of boneless Buffalo wings and tacos. Breaded chicken is deep fried and then tossed with hot sauce and butter. You can adjust the amount of heat by the spiciness of the hot sauce you use. I used frank’s red hot and needless to say, these were pretty hot. These tacos are topped with lettuce, tomato, cheddar cheese, and blue cheese dressing. This does require a little work breading and frying the chicken but that’s about it. This is another great game day recipe. Enjoy.

Beer Brats

Beers brats are perfect for cook outs and mainly, tailgating. These brats are first simmered in beer and butter and then grilled to perfection. Try to find some good fresh ground bratwurst if you can. These will be a lot fresher and have better flavor overall. This recipe is fairly easy, you will want to pierce the bratwurst to keep them from exploding while they simmer. This is another great recipe for football season. Enjoy.

Slow Cooker Chili

This is pretty much the easiest chili recipe you will find anywhere. This one is perfect for a busy day because the slow cooker does most of the work for you. Just brown the beef, chop a few vegetables, add all the ingredients into the slow cooker and you are finished. If you like your chili a little spicier you can add more hot sauce. I like my chili a little bit thicker so I drained the beans. If you like a soupier chili you can add the beans to the slow cooker with the juice. This recipe is simple and perfect for cold fall or winter nights. Enjoy.

Cuban Grilled Cheese

This is by no means an authentic Cuban sandwich but just a simple idea for a Cuban sandwich inspired grilled cheese. This recipe does not use sliced or pulled pork but uses sliced turkey instead. Ham, turkey, Swiss cheese, and dill pickles are piled onto sour dough bread and lightly grilled on both sides in the pan. For the dressing you can use either mayonnaise or mustard or both. I like to pile massive amounts of ham, turkey and Swiss onto my sandwiches, but this actual recipe calls for less. These Cuban grilled cheese sandwiches are very easy to make. Enjoy.

Buffalo Chicken Sliders

It shouldn’t come as a surprise that buffalo chicken would go great on sliders. Buffalo chicken is piled onto slider rolls and topped with blue cheese slaw. Instead of using breaded chicken this recipe uses pulled chicken mixed with buffalo sauce. You can use leftover cooked chicken or you can cook the chicken any way you like. What I did was boil the chicken breasts until fully cooked, I then gave them some time to cool and shredded them using two forks. The blue cheese slaw is nothing more than coleslaw mix tossed with blue cheese salad dressing. This is another fantastic recipe for game day. Enjoy.

Breakfast Quesadillas

Quesadillas are always a delicious idea and when you add breakfast ingredients into the mix it’s even better. These are perfect for breakfast or dinner. This recipe combines scrambled eggs, ham, bacon, cheese, green pepper and green onion. All of these ingredients are put onto a flour tortilla and then fried in the pan. You can add additional ingredients if you choose or leave out whatever you want.  These go perfect served with salsa or even country gravy would go great as well. Enjoy.

Enchilada Stuffed Shells

Enchilada stuffed shells make a quick and easy dinner. Boiled pasta shells are stuffed with cooked seasoned ground turkey and refried beans. The shells are placed into a baking dish topped with enchilada sauce and cheese and then baked in the oven. If you want you can use ground hamburger instead of turkey. After the shells have finished baking you can top them with any additional ingredients you want such a green onions, cilantro, tomato, black olives, and sour cream. This recipe can easily be double to feed several people. Enjoy.

Baked Hot Dogs

Yes, you can bake hot dogs in the oven. This is not some type of hot dog casserole but rather hot dogs with buns that are actually baked in the oven. These baked hot dogs are topped with chili, onions and cheese. The condiments include mayonnaise, mustard and relish. These three ingredients are spread onto the hot dogs buns before they are baked.  I admit I was a little skeptical of this recipe when I first saw it. I had no idea how it would turn out. In the end, it turned out to be very good. The hot dogs buns were hot too soggy or crunchy but had just the right texture. This is a super easy recipe that takes very little time to prepare. Enjoy. This recipe was adapted from In The Wabe.

Tater Tot Casserole

This tater tot casserole is perfect for busy nights when you don’t have much time to cook. This casserole consists of cooked ground beef mixed with cream of chicken soup, cheddar cheese, and tater tots. The only real work that is involved in this recipe is browning the meat. You can add additional vegetables if you want such a celery, peas, or carrots. Just throw them in the fry pan with the beef and onion mixture. You can also use different types of cheeses if you want. Enjoy.

How to Cook Chinese Food (Multiple Recipes)

I consistently get a lot of questions from people wondering how to cook Chinese food. Regardless of if you are just learning how to cook or have been cooking for awhile you will probably find this article useful. The truth is, cooking Chinese food is not hard at all. In fact, many Chinese dishes are all very similar so once you learn how to cook a few different dishes, you should develop a good understanding of Chinese cooking. In this article I will explain to make a few popular Chinese dishes. These dishes include Sesame-Orange Chicken, General Tso’s Chicken, Cashew Chicken, Black Pepper Chicken, Egg Rolls, and Crab Rangoons. All of these items are fried and most can be found at Chinese restaurants across the United States.
The first thing when preparing to cook Chinese food is to make sure you have a lot of the ingredients on hand. A lot of Chinese dishes all use very similar ingredients. Some ingredients you will want to keep in your pantry are soy sauce, rice wine vinegar, oyster sauce, sugar, and rice wine. Fresh ingredients would include ginger, garlic and green onions. A couple of questions I constantly receive are, “What is the best type of oil for deep frying Chinese cuisine?” and “Are rice wine vinegar and rice wine the same?”  The answer to the first question is peanut oil.  Peanut oil will brown nicely and give the meat great flavor when used for deep frying.  Rice wine vinegar and rice wine are not the same thing. Rice wine is an actual wine, sometimes called Sake or Mirin, while rice wine vinegar is a type of vinegar that is made from fermented rice wine.

Teriyaki Chicken Wings

Teriyaki Chicken wings are the perfect sweet and tangy appetizer. These wings go great for game day and they are something almost everyone is sure to enjoy. These wings are deep fried and then mixed with a delicious teriyaki sauce.  I really enjoyed the flavor that the grapefruit juice gave to the sauce, it was very unique. The sauce combines ingredients such as soy sauce, grapefruit juice, vinegar, and hoisin sauce. It also gets a lot of its flavor from garlic and ginger. If you would prefer not to deep fry the wings they can be baked or grilled as well. You could also make boneless wings and coat them with this sauce. Enjoy.

BBQ Chicken Sliders

If you are looking for an excellent snack for game day you might want to give these BBQ chicken sliders a try. I have posted a few slider recipes lately but these have to be my favorite. The chicken is first grilled and shredded and then mixed with your favorite BBQ sauce. If you would like a delicious BBQ sauce, you can try my BBQ Sauce Recipe. The grilled chicken is placed onto slider buns and topped with mozzarella cheese slices, lettuce, and ranch dressing. If you want to save time you could use leftover cooked chicken or buy a cooked rotisserie chicken from the store and shred it.

Chinese Shrimp with Broccoli

Shrimp with Broccoli is a simple and easy Chinese stir-fry dish. There is no deep frying in this recipe and everything can be done using a wok or fry pan. I used frozen shrimp but I would recommend fresh if you are in an area where they are available to you. The best part about this recipe is the stir-fry sauce. The sauce uses ingredients such as soy sauce, chicken broth, wine, sugar, and sesame oil. The sauce will make a lot so you can use it to serve over rice. This recipe can be prepared very quickly and is perfect for dinner. Enjoy.

Philly Cheese Steak Hot Dogs

If you love Philly Cheese steak sandwiches, you are sure to enjoy these Philly Cheese Steak dogs. These hot dogs combine all of your favorite ingredients from the classic Philly Cheese Steak onto hot dogs. This means that these hot dogs are topped with cheese sauce, steak, green pepper and onion. I grilled the hot dogs but you could boil them as well. Of course, I have to recommend going with the all beef hot dogs. For the steak, I seasoned it well with garlic powder, salt and pepper and then sautéed it in the pan. This is another perfect recipe for game day. Enjoy.

Cowboy Burgers

Burgers are always a solid choice for dinner, even in the winter. They go perfect for football season and the variety of condiments you can put on them is nearly endless. These Cowboy burgers are well seasoned burger patties and can be grilled or cooked in a fry pan. Grilling is always the best but unfortunately, it’s not always an option.  I used an indoor grill pan to make these burgers. These burgers are topped with Swiss cheese, sautéed mushrooms, French fried onions, and your favorite BBQ sauce. Enjoy.

Kung Pao Linguini

If you enjoy a spicy Chinese pasha dish, this recipe is perfect for you. Kung Pao Linguini combines kung pao chicken with noodles. This is apparently a copy cat recipe for California Pizza Kitchens Kung Pao spaghetti. We do not have a California Pizza kitchen around here so I am not aware what this dish tastes like there. I did make some modifications to the original recipe though. I rolled the chicken bits in cornstarch and then deep fried them. I also left out the dried red chili peppers. The best part about this recipe is the sauce. The sauce combines ingredients such as soy sauce, chicken broth, chili paste, red wine vinegar, and garlic. Enjoy.

Cheesy Bread

Cheesy bread is one of my favorite things to do with spaghetti or pretty much any Italian dish. It also goes great as an appetizer for parties. I usually end up buying this from the store but have discovered making my own is so much better. I got this recipe from the Pioneer Woman, and it has become one of my all time favorites! The process to making this cheesy bread recipe is fairly easy. You simply mix ingredients such as mayonnaise, cheeses, and green onions in a bowl. You then heat garlic and butter in a pan and coat the French bread with it. After that the cheese mixture is spread onto the top of the bread, placed into the oven and baked. Enjoy.

Ranch Chicken Strips

I never thought that dry ranch dressing mix would make the best chicken strips ever. Maybe it’s not just the ranch but the combination of dry ranch dressing mix, parmesan cheese , and a few seasonings. No matter the reason, these were the best chicken strips I have had in awhile. The best part about this recipe is it requires few ingredients and is so easy to prepare. The chicken strips are rolled in a dry ranch dressing, parmesan cheese, and crushed corn flake mixture. They are either then baked or deep fried. These go great for parties or just for dinner. Enjoy.

Pumpkin Cheesecake

This is a combination of cheesecake and pumpkin pie. Those who love pumpkin pie are sure to enjoy this cheesecake. The crust is mostly like any other cheesecake crust with melted butter and graham crackers, but in this recipe cinnamon and brown sugar are added as well. The filling uses spices such a cinnamon, nut mug and ground cloves to give it that classic pumpkin pie flavor. The cheesecake is then topped with a sour cream and sugar mixture. If you are looking for an excellent cheesecake recipe for the Holidays, this is the one! Enjoy.

Shrimp Parmesan

Shrimp parmesan is a very simple and delicious way to prepare shrimp. The process is fairly simple, the shrimp are tossed with olive oil, garlic, salt and pepper. They are then coated with a bread crumb and parmesan cheese mixture and baked. The shrimp are baked at 475 degrees so they do not take very long to cook, only about 10 minutes. These shrimp go perfect served on a bed of pasta with your favorite sauce. I just placed them on top of hot garlic and buttered noodles. You could also use spaghetti or alfredo sauce. If you are looking for a delicious baked shrimp parmesan recipe, give this one a try. Enjoy.

Chicken Marsala Pasta

A good chicken and mushroom dish that I always enjoy is chicken Marsala pasta. The combination of cream sauce with pasta, mushrooms and chicken is nothing short of amazing. This is a nice change up from most pasta dishes and the Marsala wine gives the sauce amazing flavor. Marsala wine is fairly common and shouldn’t be that hard to find. This dish takes a little work but it is well worth it. The chicken is first cooked in the pan and then sliced into strips. If you do not want to pan fry the chicken, you can bake it or grill it as well. The sauce is a combination of Marsala wine, chicken broth and heavy cream. This is perfect for dinner any night of the week. Enjoy.

California Sliders

If you enjoy guacamole on your hamburgers these California sliders are perfect for you. These sliders consist of well seasoned burger patties, pepper jack cheese, and guacamole. The hamburger patties can be pan fried or grilled. You can also add bacon if you want. You can also use your own guacamole if you want, or get it from the store. The serving size will vary but I would say each person could eat about 2 sliders each. This goes great for dinner but could also be served as an appetizer, and this is another great recipe to serve for game day. Enjoy.

Beef Chimichangas

Beef chimichangas are one of my favorite Mexican dishes to make using the slow cooker. Although they do require a bit of work, in the end it’s well worth it.  The cooking process consists of a beef roast, beef broth and a few seasonings being added to the slow cooker. The beef is then shredded and placed into flour tortillas with cheese and wrapped up. These can either be baked or fried in oil. I prefer the frying method but baking is good as well. To bake them, simply brush them with butter on both sides, place onto a baking sheet and bake for 8 to 10 minutes (until golden brown) at 500 degrees. You can serve these with various condiments such as salsa, guacamole, lettuce, tomato, and sour cream. If you would prefer chicken instead of beef, check out my recipe for Chicken Chimichangas. Enjoy.

Chicken Marinara

Chicken marinara is breaded baked chicken breasts topped with marinara sauce and cheese. This dish is usually served with pasta such as spaghetti or linguini. The chicken is first fried in the pan until the breadcrumb coating is browned and then finished off in the oven. I love this method because the chicken comes out of the oven very moist. The best part about this recipe is the homemade marinara sauce. This is an excellent sauce that is made from strewed tomatoes and tomato paste. This recipe might look a little complex because of the ingredients and instructions but it is not bad. It does require a little work but this dish is bound to impress almost anyone! Enjoy.

Chicken Noodle Casserole

This chicken noodle casserole is yet another delicious casserole that I made recently. I never seem to get tired of casserole recipes. They are so easy to prepare and the variety of things you can turn into a casserole is nearly endless. This casserole combines cooked chicken, with egg noodles and a creamy sauce mixture. The sauce combines two different types of condensed soups; cream of mushroom and cream of chicken. Sour cream is also added into the mix. The casserole is then topped with shredded cheese and crushed buttery crackers. This is also a great way to use up left over chicken. This can be prepared for the Holidays or any night of the year. Enjoy.

Taco Dogs

I find it interesting to pile all kinds of different ingredients onto hot dogs. Once again, I highly recommend using all beef hot dogs because I feel they have better flavor. These hot dogs are topped with taco meat, cheese, salsa, lettuce, and tomato. You can add additional ingredients as well such a guacamole and sour cream. You can cook the hot dogs however you prefer; grilling, boiling, steaming, ect. I cooked them using an indoor grill pan. Enjoy.

Twice Baked Potatoes Recipe

Twice baked potatoes make a perfect side dish to go with just about any meal or they can be served as an appetizer for parties. Just like the name says, these potatoes are baked twice. The potatoes are first baked in the oven, then sliced in half and scooped out. The scooped out potato is then mixed with a milk, sour cream and cheese mixture, and spooned back into the potato and then baked again. These go great topped with cheddar cheese, bacon, and green onion. Enjoy.

Sloppy Joe Grilled Cheese

The combination of a sloppy joe and a grilled cheese is perfect. It makes for a delicious and easy dinner for the entire family and these would also go great for any lunch. What I find interesting about this recipe is dill pickle chips are piled onto the grilled cheese before it is fried in the pan. I prefer shredded cheddar cheese but you can use any type of cheese you like. In this recipe we are making our own sloppy joe sauce but I suppose if you want to save time you can buy a can of it from the store.  Enjoy. Adapted from Grilled Cheese Social.

Bacon Wrapped Jalapenos

One of the best grilled appetizers is bacon wrapped jalapeno peppers. This recipe is so easy to make and it only consist of 3 ingredients; fresh jalapenos peppers, cream cheese, and bacon.  The jalapeno peppers are first sliced in half then seeded, stuffed with cream cheese, wrapped with bacon and grilled. You should consider wearing gloves when slicing and seeding the jalapenos because they can burn your hands. With the play offs coming up and the super bowl near this is a perfect recipe for game day. Enjoy.

Pizza Dip Recipe

This pizza dip makes a great appetizer for parties. It takes all of your favorite pizza ingredients and puts them into a hot dip.  Anyone who enjoys pizza is sure to love this recipe. Best of all, It is not very hard to make; a cream cheese mixture is spread onto the bottom of a glass dish, topped with mozzarella cheese, parmesan cheese, and pizza sauce. The dip is then topped off with more cheese, pepperoni, green pepper, and black olives. You can add additional toppings as well such as chopped onion and mushrooms. The dip can then either be baked in the oven or it can be cooked in the microwave. This goes great with sliced French baguette bread or tortilla chips. Enjoy.
