Hunan Beef


Hunan beef is another great spicy Asian dish. If you don’t want to deep fry the beef, it can be cooked in the pan as well. This recipe gets its spice from Chili paste with garlic. If you want less heat you can reduce the amount added to the sauce. Placing the beef into the freezer for about an hour before slicing will make the beef easier to slice and allow you to get thinner strips. If you don’t want to use broccoli, you can replace it with another vegetable or several other kinds of vegetables. Serve with white rice.

Tuna Salad Sandwich


Tuna salad sandwiches are pretty basic and often disappointing… but this one is different. Not only does it consist of ingredients from a tuna salad but from a Waldorf salad as well. A quick glance at the ingredient list will tell the story if this sandwich is right for you. The crunch from the apple and celery add a nice touch to this sandwich, and the Swiss cheese tops it off nicely. There is a bit of prep work required but it is worth it. This recipe is perfect for summer and it can be prepared in advance for picnics. Enjoy.

Chicken Fajita Bowls


The ingredients of chicken fajitas are put into bowls for a nice and spicy Mexican dinner. This recipe gets most of its heat from Chipotle in Adobo sauce. The process to preparing this recipe is very simple. The chicken is simmered in a tomato sauce with black beans, onions, and peppers. If you don’t want to use white rice, you can use brown rice instead. Enjoy.

Breaded Fish


If you like to cook up fresh fish this recipe is perfect for you. Summer is my favorite time to go fishing and often I end up catching a lot of bluegill and bass. I am always looking to try new breading recipes. This particular recipe will make your fish fillets extremely crispy. The breading mixture is well seasoned and its crisp texture comes from dried potato flakes. A lot of these spice ingredients may seem like a lot, but I found the seasoning to be just right.  If you are looking to have a fish fry give this recipe a try. Enjoy.

Mashed Potato Bowl


Mashed potatoes, gravy, corn, and breaded chicken topped with cheese, how could this not be good? This makes for a great dinner and if you enjoy the mashed potato bowls from KFC, you will enjoy this recipe.

Strawberry Shortcakes


It’s officially summer and that means strawberries are in season. With fresh strawberries come numerous ideas for delicious desserts. One classic dessert recipe with fresh strawberries is strawberry shortcakes. Normally when I make these I just buy angel food cake but this time I decided to try making my own. I actually got this recipe off of the back of a bisquick box. With that said, it’s no surprise this recipe calls for original bisquick mix.  If you want to make your own strawberry shortcakes give this a try. Enjoy.

Chinese Beef with Mushrooms


Beef with mushrooms is already a delicious combination to begin with but when you add Chinese flavors into the mix, it becomes even better. The best part about this recipe is that no deep fryer is needed; everything can be done in a fry pan or wok. It is also very easy to prepare for those of you who are just beginning to cook Chinese cuisine. The marinade which combines flavors such as soy sauce and oyster sauce is also used as the sauce for this recipe. If you want to add additional vegetables into the stir fry such as onion and broccoli, that would be great as well. As always, this recipe goes great served over white rice. Enjoy.

Mexican Casserole


Casseroles just never seem to get old to me. There are so many different things you can turn into a casserole. This Mexican casserole combines your favorite ingredients into a baked dish. The base is crumbled tortilla chips and they are topped with refried beans, salsa, taco meat, and cheese. You can put whatever you want on top of the cheese but I prefer green onion, tomatoes, and black olives. This also goes great with sour cream. The best part is, this is a very easy dish to prepare and will be on the table in no time.

Blueberry Crumb Bars


Blueberry crumb bars are an excellent way to use up fresh blueberries. One thing that I enjoy about this recipe is that it is fairly easy to make.  The process is very simple, a dough mixture is placed into the bottom of a baking pan, topped with fresh blueberries and the remaining dough mixture is then crumbled on top. These bake for about 45 minutes and you will be enjoying them in no time.

Patty Melt


If you want to try a different take on the burger, the patty melt is always a good choice. This is the classic version of the patty melt with cheese and onions. If you are not familiar with the patty melt it is basically like making a grilled cheese with a hamburger in the middle. If you want to use a different type of cheese besides Swiss you can use American or really any type of cheese you want. The bread can be switched up as well. If you are not a fan of rye bread, regular white bread is a good substitute. This recipe can be prepared indoors in a fry pan. Enjoy.

Honey Mustard Chicken


During the summer one of my favorite things to grill besides hamburgers is chicken breasts. BBQ is always a good option but sometimes I like to switch things up and use honey mustard sauce. There is nothing complex about this recipe. Just brush the chicken with honey mustard sauce and grill until it’s done. It can’t get much easier than that. The sauce combines ingredients such as Dijon mustard, mayonnaise, honey, and steak sauce. This is perfect for summer cookouts. If you want even more honey mustard flavor let the chicken marinade in the sauce for awhile. Delicious! Enjoy.

BBQ Hot Dogs


It should come as no surprise that hot dogs and BBQ sauce would be a great combination. During the summer hot dogs are an excellent choice for the grill. These hot dogs are brushed with BBQ sauce while grilling and then topped with homemade coleslaw and a dill pickle spear. I recommend using the all beef hot dogs as they definitely have better flavor. They are a little more expensive but well worth it. For the BBQ sauce you can either use store bought or you can make your own. These are perfect for summer cookouts. Enjoy.

BBQ Chicken Sandwich


This BBQ chicken sandwich is more of what I would consider a BBQ chicken blt. It combines BBQ chicken breasts with bacon, lettuce and tomato.  However, make really makes this sandwich stand out is the avocado ranch dressing. The dressing is nothing more than ranch dressing and a fresh avocado blended together. The chicken can either be baked or grilled. For the bread you can use whatever you like but I prefer sour dough. Enjoy.

Macaroni Salad


During the summer months macaroni salad is one of my favorite dishes to prepare. It makes a great side dish to go with grilled chicken or hamburgers or it can be a meal in itself. This recipe ranks on the top of my list for cold salads. You won’t find any seafood in this one, but for those that require meat there are ham chunks in this salad. Some other notable ingredients include hard boiled eggs and celery. The best part of this salad of course is the dressing. Mayonnaise just isn’t enough, Dijon mustard, dill relish and chopped pimentos are required as well.

Grilled Corn on the Cob


You can grill just about any vegetable and during the summer one of my favorite vegetables to grill is corn on the cob. The corn cook right in their husks so there is no need for tin foil or anything like that. It is important to soak them in water first so they don’t burn. This is perfect if you want to use the grill to cook burgers, steak, ect and then just throw the corn on afterwards. The best part about this recipe is the cilantro lime butter. I require butter on my corn on the cob and when you add cilantro and lime into the mix it’s delicious! Enjoy.

Chicken Cordon Bleu Pizza


This recipe is perfect for chicken cordon bleu lovers. This amazing pizza combines all of your favorite chicken cordon bleu ingredients such as cheese, chicken and ham. Instead of using chicken flavored gravy I decided to go with alfredo sauce and it turned out nicely. For the chicken, it is covered with bread crumbs, fried in the pan and then sliced. Using a premade pizza crust saves a lot of time in my opinion but you could make your own. The pre-baking of the crust will stop it from becoming soggy on the bottom. Enjoy.

French Dip Sandwich


The French dip is a very popular hot sandwich. Chances are you have made them at home or had them at your favorite restaurant. With this recipe you can make your own French dips completely from scratch. This recipe does not use deli roast beef but the slow cooker method. The slow cooker does all of the cooking for you, so this recipe does not require much work. The Au Jus comes right out of the slow cooker from the cooking process and it is the highlight of this recipe for sure. I like to add a variety of vegetables into the slow cooker with the roast to add more flavors. Some of the vegetables I added were celery, carrots and onion. This recipe is perfect for dinner or a party. Enjoy.

Grilled Steak Tacos


I always enjoy using the slow cooker or frying pan but steak tacos don’t get much better than when the steak is cooked on the grill. The steak gets its flavor from a delicious marinade. Some of the key ingredients in the marinade include orange juice, lime juice, and cider vinegar. The steak can be marinated anywhere from a few hours to overnight. If you do not have a grill these can be cooked in the broiler instead. I like to add condiments to these tacos such as guacamole, lettuce, tomato, and Monterey jack cheese. Enjoy.

Jerk Chicken Wings



Jerk chicken wings are perfect for summer grilling and make a great appetizer for parties. This is not a wing sauce but rather a marinade. If you have had jerk chicken before you would know it has a very unique flavor.  Some of the interesting flavors in the marinade are ground cloves, nutmeg and allspice. The chicken wings can be marinated anywhere from 4 hours to overnight.

Mocha Cake


Those that enjoy coffee will love the delicious flavor of mocha cake. This is a very moist and rich cake that gets a lot of its flavor from cocoa powder and instant coffee. If you want to up the coffee flavor you can add more than 1 tablespoon of instant coffee powder. You could try 2 or 3 tablespoons. After the cake is baked, it is then topped with a mocha frosting. The mocha frosting adds even more coffee flavor to this amazing cake. If you are looking for a very moist and delicious cake, give this one a try. Enjoy.

Wet Burritos


Being a lover of Mexican cuisine it came as a shock to you that I had never heard of wet burritos. After looking over the ingredient list knew this was something had to make. If you are not familiar with wet burritos they are flour tortillas filled with a ground beef mixture and topped with a chile sauce and cheese. The burrito filling consists of hamburger, green chilies, and refried beans. What really impressed me about this dish was the chile sauce. This sauce uses condensed tomato soup, enchilada sauce and canned chili. The combination was excellent. If you are looking for a slightly different take on the burrito, give this one a try.

Cheeseburger Pizza


If you follow this blog you know how much I enjoy eating cheeseburgers. I thought why not put the delicious ingredients of a hamburger onto a pizza? This pizza has all of the toppings of a cheeseburger. The toppings include cheese, ground beef, bacon, pickles, lettuce and tomato. Some recipes used ketchup and mustard for the sauce, but that didn’t sounds good to me so I went with pizza sauce instead. Using a pre-baked crust will help to save time and make this a very easy recipe to prepare. Enjoy.

Cherry Cobbler


This cherry cobbler recipe is an excellent way to use up fresh cherries. Unlike most recipes, this one uses fresh sour cherries instead of the canned. It does require a little work to pit the cherries but nothing major and the end result is fantastic. This recipe is fairly easy with few ingredients. The cherries are tossed with sugar to make them sweat. This is a perfect baking dish for summer. Enjoy.

Stuffed Green Peppers



Stuffed green peppers are a dish that is sure to please the entire family. This dish consists of green bell peppers stuffed with a ground beef and tomato mixture. Some of the other ingredients for the filling include rice, and onion. You could add additional ingredients into the filling based on your taste if you choose. The peppers are stuffed with this mixture and then topped with cheese and condensed tomato soup.  This recipe is perfect for garden fresh peppers in the summer but can be prepared all year round. Chicken Chimichangas


Chicken chimichangas require a little work but they are definitely worth it. I actually prefer these over the beef chimichangas.  Tortillas are filled with a mixture, rolled, and then fried in oil. The filling mixture consists of ingredients such as chicken, rice, refried beans, and black olives. After the chimichangas are fried they are topped with a avocado mixture. This mixture is very similar to guacamole. I feel both the sour cream and guacamole mixture are very important to the overall flavor of this dish. Southwestern Spaghetti


Southwestern spaghetti combines Italian and Mexican cuisine to make an amazing and memorable pasta dish. This is a type of baked spaghetti so the dish is finished cooking in the oven.  Ground beef is cooked in the pan and seasoned with garlic, chili powder, cumin and various additional seasonings. It is then placed on top of the cooked spaghetti noodles, topped with cheese, and placed into the oven. This is a fairly easy dish that doesn’t take very long to prepare.
